The latest oenological research has confirmed the organoleptic results in terms of quality obtained while processing grape in a temperature controlled envinroment.

ALCRYO is the answer to this oenological issue. The machine has been developed by SIPREM and AIRLIQUIDE in synergy and it is the most important innovation technology to reach high quality results in wine making processes.

The system exploit inert gas like CO2 decreasing the temperature of grape continuosly up to 0°C.

The chilled grape is then conveyed to the crusher or press. The same gas is used to move the grape easily through the pipes, reducing the friction and protecting the product.

The grape transport is run in a totally reduced enviroment. This condition is crucial to save aromas perfectly.

The investment on this plant and the low costs in using and maintenace are paid by its high benefit resulting on your wine.

Many wineries already used the ALCRYO100. By using this system they low the temperature of grape up to 5°C while conveying it at 10 tons per hour to the crush pad.
